There was a time when the only beets I knew came from a can.

They were soft, overly sweet, and usually floating in a bright purple liquid that stained everything it touched. Needless to say, I wasn’t in a hurry to eat them again.

Years later, I discovered roasted fresh beets.

Everything changed.

Sweet without being sugary. Earthy without tasting like dirt. Tender, colorful, and surprisingly versatile, fresh beets have become one of my favorite vegetables to enjoy from late summer through fall. They’re just as welcome at a casual weeknight dinner as they are on a holiday table.

This has become one of my favorite warm-weather lunches.

Slice roasted golden beets and gently toss them with a bed of microgreens or a spring mix. Whisk together a light vinaigrette using extra virgin olive oil, champagne vinegar or fresh lemon juice, Dijon mustard, and just a touch of maple syrup. Finish everything with a generous sprinkle of roasted sunflower seeds for a satisfying crunch.

It’s light, colorful, and feels like something you’d order at a favorite café, yet it comes together in just a few minutes.

2. A Seasonal Roasted Vegetable Platter

Roasted beets become even more delicious when paired with other seasonal vegetables.

In late summer and early fall, roast them alongside carrots, sweet potatoes, and red onion. As the weather turns cooler, add turnips, parsnips, and butternut squash for a heartier autumn and winter version.

Instead of the traditional balsamic glaze, make a simple apple cider glaze by simmering fresh apple cider in a small saucepan until it reduces into a thick, glossy syrup. During the last few minutes of roasting, drizzle the glaze over the vegetables so it caramelizes beautifully in the oven.
