Every generation seems to have a dessert that instantly transports them back to childhood.

For some, it’s homemade pie.

For others, it’s warm chocolate chip cookies.

For many of us who grew up in middle-class families in the 70s and 80s, it was pudding.

Or Jell-O.

There was something magical about hearing those little glass dessert bowls clink onto the kitchen table after dinner.

Dessert wasn’t an everyday occurrence in our house.

Money was stretched carefully, and treats were just that… treats.

Which is probably why a simple bowl of chocolate or vanilla pudding felt like such a celebration.

It wasn’t fancy.

It wasn’t expensive.

But somehow it always tasted special.

The sweetest recipes aren’t always the richest. Sometimes they’re simply the ones wrapped in our favorite memories.

A Bowl of Comfort

As I’ve gotten older, I’ve realized that food has an incredible ability to unlock memories.

One spoonful can bring back an entire season of life.

For me, pudding is one of those foods.

It’s comfort.

It’s nostalgia.

It’s childhood.

It reminds me of family dinners, scraped knees that somehow deserved dessert, and those rare evenings when something sweet appeared after the plates had been cleared.

Even now, decades later, a bowl of pudding still feels like being taken care of.

A Plant-Based Twist on an Old Favorite

These days I eat a plant-based diet, so the boxed puddings of my childhood no longer make an appearance in my pantry. And while I haven’t ventured into the world of vegan gelatin quite yet, pudding has happily remained on the menu.

I usually make mine with vanilla almond milk because I think it produces the richest, creamiest flavor. But don’t feel limited to almond milk. Any plant-based milk will work beautifully. If you can find a vanilla-flavored version of your favorite plant-based milk, that’s my recommendation. It adds a little extra depth of flavor without any extra effort.

Even better, making it from scratch is wonderfully simple.

No mysterious ingredients.

No dairy.

Just a handful of pantry staples that come together in a matter of minutes.

Vegans.

Non-vegans.

Kids.

Adults.

No one has ever politely pushed away a bowl of creamy vanilla pudding.

At least not at my house.

The Joy of Homemade

There’s something satisfying about stirring a saucepan and watching what looks like sweet plant-based milk slowly transform into silky pudding.

It feels almost like kitchen magic.

One minute you’re wondering if anything is happening.

The next minute the mixture thickens almost all at once, and suddenly you’re wondering if you should have grabbed the serving bowls sooner.

(Ask me how many times I’ve had to frantically shuffle ramekins onto the counter.)

Fortunately, pudding is forgiving.

Even if you panic for a brief moment, everything usually works out just fine.

Unlike soufflés.

Soufflés hold grudges.

Dress It Up… Or Don’t

One of the reasons I love pudding is that it’s equally happy being simple or dressed up.

A bowl all by itself?

Perfect.

Fresh raspberries?

Even better.

Blueberries, sliced strawberries, peaches, or banana slices?

Absolutely.

A dusting of cocoa powder?

Now we’re getting fancy.

You can even top it with toasted coconut, shaved dark chocolate, or chopped pistachios if you’re feeling particularly ambitious.

Or you can simply grab a spoon straight from the refrigerator after dinner.

No judgment here.

Simple Food Has Staying Power

I’ve made desserts that required multiple mixing bowls, specialty ingredients, and more patience than I possessed.

They’re wonderful.

But they aren’t the desserts I find myself craving most often.

The ones that stay with us are usually the simple ones.

The recipes we grew up with.

The ones we can make without much planning.

The ones that quietly become part of family traditions.

Sometimes the simplest desserts become the most beloved.

Creamy Vanilla Plant-Based Pudding

Ingredients

  • 4 cups vanilla-flavored plant-based milk (vanilla almond milk is my favorite because I think it creates the richest flavor, but any plant-based milk works beautifully)
  • ½ cup granulated sugar
  • 6 tablespoons cornstarch
  • 1 teaspoon vanilla extract, or more to taste

Directions

  1. Combine the plant-based milk, sugar, and cornstarch in a medium saucepan over medium-high heat.
  2. Begin whisking immediately to dissolve the cornstarch completely.
  3. Bring the mixture to a gentle boil.
  4. Reduce the heat to a high simmer and continue stirring constantly until the pudding thickens, about 5 minutes.
  5. Remove from the heat and stir in the vanilla extract, adding more if you’d like an even richer vanilla flavor.
  6. Pour into individual serving bowls or ramekins.
  7. Refrigerate until fully chilled.

Serving Ideas

Serve topped with fresh berries, sliced peaches, mandarin oranges, bananas, chopped nuts, toasted coconut, or a light dusting of cocoa powder. It’s equally delicious all on its own.

The Best Kind of Dessert

One of the nicest things about this recipe is that it doesn’t try to impress anyone.

It doesn’t require special equipment.

It doesn’t cost much.

It doesn’t take all afternoon.

It simply delivers exactly what dessert should.

Comfort.

A little sweetness.

And perhaps a reminder that some of our happiest memories weren’t built around extravagant meals or elaborate celebrations.

Sometimes they were built around a simple bowl of pudding shared at the kitchen table.
